I got a hand blender for Christmas and it inspired me to make some soup. I chose this one because I have always wanted to try it and I can't find it pre-made in any shop. It also has very cheap8 ingredients.Serves 4
Ingredients:
2 Parsnips
2 Braeburn Apples
1 large potato
1/2 onion
1 vegetable stock cube
75ml double cream.
Equipment:
Hand blender
Large saucepan
Knife
Chopping board
Measuring Jug
1) Peel the onion and chop into small pieces.
2) Peel parsnips and potatoes. Slice parsnips and chop potato into small chunks.
3) Fry the onion until soft.
4) Add 1000ml cold water, 2 vegetable stock cube, salt, pepper potatoes and parsnips.
5) Bring to the boil and simmer for 10 min. Meanwhile, peel and chop the apple into chunks (excluding core).
6) Add apple and simmer until all ingredients are soft (probably about 15 minutes).
7) Take it off the heat and allow to cool a little so it won't burn you if you are splashed. Blend until smooth.
8) Stir in the double cream.
9) If serving the whole thing immediately, heat on a low heat for a few minutes to ensure it is piping hot. If just serving one or two portions and saving the rest for later, pour the portion into a bowl and microwave.
