Couscous is a perfect student food as it is very cheap and you just add hot water to cook it. It has all the convenience of a pot noodle but is much healthier.Serves 1
Ingredients:
1/2 mug couscous
A teaspoon of tomato paste
A tablespoon of chilli sauce (I use blue dragon)
1 vegetable stock cube.
1/2 a lemon
4 Cherry tomatoes
4 spring onions
A portion of cooked prawns (or other meat/fish of choice)
Equipment:
Mug
Jug
Small plate
Spoon
Knife
Chopping board
1) Finely chop tomatoes and spring onions.
2) Pour the couscous into the jug and add the vegetables, the juice of the lemon, the stock cube, the tomato paste and the chilli sauce.
3) Add a mug of boiling water, stir well and cover with the plate.
4) Leave for 5 minutes, stirring occasionally.
5) Serve with prawns.
