This colourful dish is full of vitamin C to keep away the fresher's flu! It was the first proper meal I made from scratch at university and it is still one of my favourites. It only uses 5 ingredients and it is really quick to make.Serves 1
Ingredients:
1 Chicken Breast (a pack of 2 can be bought for just £1.50 at Lidl. freeze one for another day.)
1/2 a Red Pepper
5 Cherry Tomatoes
3 tablespoons of sweet chilli sauce
Rice
Equipment:
Frying Pan
Small Sauce Pan
Colander
Spatula
Knife
Chopping Board
1) Half fill the saucepan with water and put on a medium heat.
2) Chop the chicken into chunks.
3) Slice the pepper in half and remove the seeds, stalk and white/pink bits. Set one half aside. Slice the other half into roughly 3cm cubes.
4) Slice the tomatoes in half.
5) Add some oil to the frying pan and put on a medium heat.
6) Add the chicken and the veg and fry for 15 to 20 minutes. Whilst this is cooking, the water will come to the boil. Add the rice, allow to come back to the boil and set a timer for the time stated on the packet.
7) When the chicken looks cooked, slice a piece in half to check. If it is, add 3 tablespoons of sweet chilli sauce.
8) Cook for 5 more minutes.
9) Drain the rice and serve.
