Serves 1
Ingredients:
1 chicken breast (a pack of 2 can be bought for just £1.50 at Lidl. Freeze one for another day)
2 tablespoons of peanut butter (smooth and crunchy both work)
2 tablespoons of sweet chilli sauce (I use blue dragon)
1 Portion of Rice (I use half a very small water tumbler)
Equipment:
Large frying pan
Small saucepan
Spatula
Chopping board
Meat Knife
Calendar

1) Half fill the saucepan with water and put on a medium heat.
2) Chop the chicken into chunks.
3) Add some oil to the frying pan and put on a medium heat.
4) Add the chicken and fry. Turn regularly with the spatula. Whilst this is cooking the rice will come to the boil. Add the rice, allow to come back to the boil and set a timer for the time stated on the rice packet.
5) When the chicken has been frying for about 15 to 20 minutes and it is golden brown, chop a piece in half. If it is cooked, turn down the heat and add the remaining ingredients.
6) Allow it to cook for a few minutes whilst stirring until the peanut butter has melted and the ingredients have mixed the create a sauce.
7) Drain the rice and serve.
