This dish takes a little while and creates quite a bit of washing up. However, it is one of my favourite meals and definitely worth it! It is perfect for a cold day. I adapted it from a nosh student recipe.Serves 1
Ingredients:
1 or 2 medium potatoes (depending on potato size and appetite)
1 chicken breast
1 leek
75ml double cream
Teaspoon of butter
A small handful of grated cheese
A few button mushrooms (optional)
Equipment:
Frying Pan
Small saucepan
Small casserole dish
Chopping board
Knife
Teaspoon
Spatula
1) Peel potatoes and chop into 2cm cubes.
2) Put in a salted pan of cold water and put on a medium heat.
3) Chop the chicken into small pieces. Slice the leeks lengthways in half and then slice across.
4) Heat a little oil in the frying pan on a meduim heat.
5) Fry the leeks and chicken until leeks are soft and chicken appears cooked on the outside.
6) Slice the mushrooms and add to the pan. Fry until soft.
7) Add the cream and bring to the boil. Pour the mixture into the bottom of the casserole dish.
8) Drain the potatoes, add the butter and mix. Add the potatoes to the casserole dish on top of the meat. Top with grated cheese.
9) Bake in the oven for 25 minutes. Now is the perfect time to start all that washing up!
