Chicken Tika

This dish was loosely based on a Jamie Oliver recipe my dad makes. This version is quicker, easier and perfect for fewer people.

Serves 1

Ingredients:
1 chicken breast
A portion of new potatoes
3 teaspoons of tika curry paste
4 cherry tomatoes

Equipment:
Frying pan
Saucepan
Knife
Chopping board
Spatula
Slotted spoon.

1) Peel potatoes and slice into chunks roughly the same size. Put in a pan of cold, salted water and put on to boil.
2) Chop the chicken into chunks and cover with paste. Rub it all over the chicken to ensure every surface is covered.
3) Cut the tomatoes in half.
3) When the potatoes come to the boil, turn down to simmer.
4) Put a little oil in a frying pan on a medium heat.
5) Add the chicken and the tomatoes. Cook for 15 to 20 minutes.
6) When the chicken looks cooked, cut a piece in half to check. Check if the potatoes are cooked by seeing if a fork will easily stab one.
7) Drain potatoes and serve.
