This recipe only uses 3 ingredients and requires minimal effort. Once it is cooking you can do other things. It is also low in fat.Serves 1
Ingredients:
1 cod fillet (these are often found in packs of 2. Freeze one for another day)
1 200g tin of chopped tomatoes (half a normal-sized tin)
4 to 6 new potatoes
Equipment:
Small casserole dish with lid
Medium saucepan
Knife
1) Peel potatoes, chop in half and put in a pan of cold water on a medium heat. Add a little salt.
2) Pre-heat oven to 160.
3) Open can of tomatoes and pour a little in the bottom of the casserole dish. Place fish on top. Add the rest of the tomatoes.
4) Bake in the oven for 20 minutes with the lid on. When the potatoes come to the boil, turn down to simmer.
5) Remove lid and bake for another 10 minutes
6) Drain potatoes and serve.
