An omelette is a quick filling meal that is perfect for using up leftover veg, as you can pretty much stick whatever you like in them! They also create very little washing up! Costs approximately 80p to £1.20 depending on what veg you add.
Serves 1
Ingredients:
3 eggs
A large handful of grated cheddar. How much you add depends on personal taste and how much you love cheese!
Vegetables - basically whatever you have lying around. Tomatoes, mushrooms, spinach, peppers, potatoes and leeks all work well.
Pre-cooked ham or chicken (optional)
Pepper
Slices of bread to serve.
Equipment:
Medium to large frying pan
Fork
Knife
Jug
1) Wash and chop veg.
2) Put a little oil in a frying pan and put on a medium heat. Pre-heat grill.
3) Fry the veg except for the spinach if using until soft. Meanwhile, break and beat the eggs in the jug. Add the cheese and a little pepper to the eggs.
4) Pour in the egg and cheese mixture and add any meat and spinach.
5) Allow to cook for a few minutes. To check if it is done, try and slide a knife between the omelette and the pan. If it comes away easily the bottom is cooked.
6) Take the pan off the heat and place it under the grill. When the top of the omelette is solid it is cooked.
7) Serve with bread and butter.
