Before You Start

I am Gem, a first-year student living in halls with 4 wonderful girls at Falmouth University. I like cooking and initially looked to student cookbooks to find interesting things to eat. However, I found these recipes were often quite complex, time-consuming and involved many different ingredients which I do not have the money to buy or the space to store. Many made 4 portions and I do not have the space to store the leftovers. Although I love my flatmates I do not love them enough to feed them every night! Many recipes involved things like weighing scales or blenders which I do not have. 

Frankly, trying these supposedly student-friendly recipes made me want to live off oven chips. And if I am put off cooking by these books when I actually enjoy it, people that have never attempted it before definitely aren't going to want to try the recipes. The reason these cookbooks do not meet our needs is because they are not actually written by students!
So this is my alternative. A collection of simple easy recipes that me and my flatmates are actually using to feed ourselves at uni. Most of them will serve one person and use 5 or less ingredients, although I will do a few recipes for groups and some slightly more complex things to try on the weekend. Don't worry if you have only ever cooked super noodles. You'll be fine. Enjoy!

Note: my portions are quite large, partly because I eat a lot, and partly because if your too busy to cook a proper meal every night, when you do you might as well eat plenty! If you are less of a gannet, you may want to save some for later! I don't put calorie information on here as I don't believe in worrying too much about what you are eating. Food should be fun. And I wouldn't have a clue how to accurately calculate it anyway!
