Lemony Fish

This simple dish can be left alone while you work once it is in the oven. You could serve it with veg like peas or broccoli.

Serves 1

Ingredients:
Cod fillet (usually found in packs of 2. Freeze the spare)
1/2 lemon
3 cherry tomatoes
New Potatoes (3 to 5 depending on size)

Equipment:
Small casserole dish
Saucepan
Juicer
Knife

1) Peel the potatoes and chop in half. Put in a pan of cold water and put on a medium heat.
2) Juice the 1/2 lemon. Pour into casserole dish. add the cod fillet. Cut the tomatoes in half and place in the casserole dish.
3) Put the lid on and put in the oven for 30 minutes at 160 degrees.
4) When the potatoes come to the boil, turn down to simmer.
5) Drain potatoes and serve.
